My schedule is pretty much both unpredictable, but also flexible. Weekdays after 3, in general, is fine (or weekends which I think you said is tough on yoru side).
If this week, I'm probably tied up until around Thurs. So anytime Thurs or later (e.g. weekend or next week, etc.) works on my side.

As for Jackson, I worked for MCI/Worldcom (known as LDDS/Worldcom back then) for 2 years around 1998.
So, being from Mississippi, are you and your family big catfish fans? :) I learned to love it there, and spent a lot of time (with limited success) trying to find decent places here in Dallas. haha
